Meet the Man Behind the Masala.
It didn't start in a culinary school. It started in a kitchen in Punjab, where a young man fell in love with the smell of whole spices hitting hot oil. Over 40 years later, that same passion shows up every single day at The Darbar.
Our Executive Chef has spent four decades mastering the kind of cooking that can't be rushed — slow-simmered curries, hand-ground masalas, and breads pulled fresh from the tandoor. Every technique he uses was earned through years of repetition, instinct, and an unshakeable belief that food made with care tastes completely different.
When you eat here, you're not eating a recipe off a screen. You're eating something he has made thousands of times — and still makes with the same care as the very first.
The Legacy Continues.
He grew up watching his father cook. The sounds, the smells, the rhythm of the kitchen — it was just home to him. Now he stands in that same kitchen, working side by side with the man who taught him everything.
Jaggi brings his own energy to The Darbar. He's grown up between two worlds — rooted in the traditional recipes his father perfected, but with a fresh eye for how to serve them. Together they make a team that feels less like a restaurant crew and more like what it actually is — a family doing what they love.
Watching the two of them in the kitchen together is something else. There's a shorthand between them that only comes from years of shared meals, shared stories, and shared pride in every plate that leaves the pass.

Nothing sits. Every morning we start from scratch — fresh doughs, freshly ground spices, stocks made in-house. If it isn't fresh, it doesn't go out.
